Funny Story

Earlier this week, I wanted to post a recipe that I had tried. It was a honey and soy baked chicken recipe. Instead of baking, we decided to grill it. I love chicken and I especially love it grilled using a charcoal grill. I don't normally use a recipe when we're grilling chicken but I decided to give this one a try. It's pretty similar to what I do, soy & garlic, S&P but this recipe included honey and olive oil.


When I started to blog about it, I realized I had forgotten what website I found the recipe from. I looked and looked and looked but I just couldn't find the recipe. It was really starting to annoy me. I looked all through my internet history for Friday and Saturday since I found the recipe Friday night and cooked the chicken Saturday. I could not find it anywhere so I could not blog about it.


I was looking in my recipe folder under my Favorites today for no particular reason and what did I find? The recipe. Why didn't I think to check there? Oh I know, because I was SURE I didn't add the recipe to my favorite files. Silly me. OK so that probably wasn't funny to you but it was kind of funny for me. Here is the recipe. Thought I'd pass it along since I thought it was pretty good.




Ingredients:

•3 tablespoons olive oil
•3 tablespoons soy sauce
•5 tablespoons honey
•4 cloves of garlic; minced (or substitute 1/2 teaspoon garlic powder)
•1/2 teaspoon ground ginger
•1/2 teaspoon fresh ground pepper
•3 pounds (approximately) chicken thighs (or preferred chicken meat)
•salt and pepper to taste
Instructions:

- Preheat oven to 425°F.

- Mix first 6 ingredients together in a large plastic zip-top storage bag. Add salt and pepper to taste. Add the chicken to plastic bag making sure to coat each piece.

- Place chicken in baking dish along with sauce/marinade or leave in large plastic bag to marinate in the refrigerator.

- When ready to cook, in a baking dish, bake chicken in a 425° oven for 25 minutes with the skin side up. Turn the chicken and cook another 15 minutes. Then turn the chicken again to skin side up and finish cooking for another 10 minutes to crisp up the skin. Cook until internal temperature of chicken reads 165°F.
